BOMB.COM BANANA COCONUT PROTEIN FLAX MUFFINS

I’VE MADE A FEW OF JAMIE EASONS PROTEIN BARS FOUND ON HER WEBSITE. THE PUMPKIN ONES ARE DELICIOUS! A FEW DAYS AGO I WAS WANTING TO MAKE SOME MORE BUT DIDN’T HAVE ANY PUMPKIN SO I DECIDED TO EXPERIMENT WITH MY OWN PROTEIN MUFFIN RECIPE! ALL I HAD WAS BANANAS, UNSWEETENED COCONUT FLAKES AND COCONUT EXTRACT. TURNS OUT THESE ARE BOMB.COM! THEY ARE GLUTEN FREE AND THE BEST PART IS THERE IS NO SUGAR ADDED! HERE’S THE RECIPE:

INGREDIENTS:

  • 2 TSP GROUND CINNAMON
  • 1 TSP GROUND NUTMEG
  • 1/8 TSP COCONUT EXTRACT
  • 1 TSP BAKING POWDER
  • 1 TSP BAKING SODA
  • 1/2 TSP SALT
  • 2 CUPS OAT FLOUR
  • 1/4 CUP FLAX MEAL
  • 4 LARGE EGG WHITES
  • 2 LARGE BANANAS SMASHED
  • 1 SCOOP OF YOUR FAVORITE PROTEIN POWDER (I CAN’T GET ENOUGH OF MY MONSTER MILK GRAHAM CRACKER PROTEIN)
  • DESIRED AMOUNT OF UNSWEETENED COCONUT FLAKES

DIRECTIONS:

  1. PREHEAT OVEN TO 350 DEGREES.
  2. SPRAY YOUR MUFFIN TIN WITH OLIVE OIL NO STICK SPRAY
  3. MIX TOGETHER THE DRY INGREDIENTS
  4. ADD EGGS, COCONUT EXTRACT AND BANANAS. IF THE CONSISTENCY IS TOO THICK ADD A LITTLE WATER. IF ITS TOO THIN ADD SOME MORE OAT FLOWER.
  5. FILL MUFFIN TIN ABOUT 1/2 FULL
  6. SPRINKLE A FEW COCONUT FLAKES ON TOP
  7. BAKE FOR 20-25 MINUTES
  8. CHECK TO MAKE SURE THEY ARE FULLY COOKED BY POKING ONE WITH A TOOTHPICK. IF THE TOOTHPICK COMES OUT CLEAN THEN THEY ARE DONE.
